Feed Me Friday
Yesterday we started our new season of Bible study groups for women. I LOVE the sounds of many different women getting to know each other, share what fills their lives, and talk about what they hope to learn. It’s going to be good!
So for the kick-off morning, I made muffins on Wednesday night. But Jeff said, “Did you use a different recipe? These don’t seem like your usual muffins.” Translation of kind words by sensitive husband: “These muffins are rotten. You should stick to being the Bible teacher.” 😉 Or at least that’s what I heard …
So since I love my Bible study gals, I made new muffins on Thursday morning. Panera isn’t beating down my door for this recipe, but these are RELIABLE, NO-FAIL, YUMMY muffins, and sometimes we need that. I did, and I hope you enjoy them. My friend Kim suggested I use the bad batch of cocoa muffins for a food fight. Thanks Kim!
Applesauce Muffins
- 1 1/2 c. sugar
- 1/2 c. butter softened
- 2 eggs
- 2 c. flour
- 1 t. baking powder
- 1 t. cinnamon
- 1/2 t. baking soda
- 1/2 t. ground cloves
- 1/4 t. salt
- 1 c. applesauce (not flavored)
Cream the sugar and butter well, then add each egg separately. Put all the dry ingredients together and then add it to the creamy mixture, alternating with the 1 c. of applesauce. Don’t over-mix it.
Best to use paper muffin liners and then fill them about 2/3 full. That will make about 18-20 muffins. Bake at 350 degrees for 20-25 minutes. Don’t over-bake them. That was one of my fatal errors with Muffin Plan A. Nobody likes a dry, burned muffin. Not even kind husbands. Ahem …
These would be awesome to bake for Saturday or Sunday morning or to send to the office or school on Monday morning. They are super easy to make, not expensive, and NO FAIL. And sometimes we need that. 😉
This weekend
Tomorrow morning I’ll be cheering the kids on at their first BIG cross country meet! I’m already nervous for them. And then tomorrow night I have the pleasure of challenging our Women’s Ministry Leadership Teams at a dinner. I appreciate your prayers as I want to encourage and challenge these awesome servants. I’m really excited about the message God has planted in my heart for these women!
