Simple Cinnamon Apple Salad & EVERYTHING!

Feed Me Friday ~ Simple Cinnamon Apple Salad

We ate the evidence for this recipe before I could snap a picture, but try to conjure up an image. I so want you to be inspired to make this very simple, very economical, and actually very healthy recipe … because it’s totally sweet and delicious and sings “Fall!” to the tune of God Bless America. 🙂 You’ll have time to figure that out, because this recipe is so quick. Simple Cinnamon Apple Salad

Mix the dressing well:

  • 3 T. light mayo
  • The juice of 1 orange OR 2 T. apple cider
  • 2 T. milk
  • 3 T. brown sugar
  • 1 t. cinnamon

Prepare:

  • 3 medium apples (I used Honey Crisp) chopped OR about 4 cups
  • 1/3 c. dried blueberries or cranberries
  • (You could add the “old version favorites” of chopped walnuts, celery, or marshmallows, but this salad does NOT need them, and kids love it better without them. Really.)

Stir the fruit, berries and dressing together. Chill for at least an hour and serve as a side dish or send with a packed lunch. This is very Autumn-y and sweet in a healthy, fresh way. I think you could even put on a dollop of whipped cream and call it dessert. There was none left to take a picture of!  (And I have NO IDEA why the bullet points are double … it’s a blogging mystery. Anyone have the answer?)

    I just came over from Mary’s site to see your pin…it’s gorgeous! Can you believe that I’ve never seen fall colors like that in person? Where I live, the leaves are green, turn brown, and fall off. So I’m a bit partial to pictures like this. 🙂

    (And the double bullet points…did you type bullets into your post and then format as a bulleted list? Or type in one program and then copy/paste or upload directly? That may have caused confused your post editor. Those are my first two thoughts.)

      Oh I’m sorry you don’t get to see the colors. Every year it’s like it surprises me … it’s so amazing it doesn’t look real. Definitely a miracle! I’m glad you like the pin. 🙂 Thanks!

      As for the bullet points … no, I formatted as bullet points while in WP and then made it a text box. Maybe I should try changing the order of that formatting. It’s happened before, too. Weird??
