It’s the first Feed Me Friday in February! Not everything you cook has to be about the Super Bowl or Valentines Day. Sadly, winter and fruit salad don’t go together. I just bought some strawberries that tasted like rice cakes; the options for fruit are pretty limited during the cold months, unless you live in Florida or California or the Philippines. Since I don’t live in those warmer destinations, I turn to my pantry for some fruit in our diet. Canned ingredients are good alternatives when fresh options are limited.
This is a cousin to my Five Cup Salad, with the addition of apricots and using Greek yogurt as the binding sauce.I also love this recipe, because it’s pretty inexpensive. I made a batch of about 8-10 servings for about 50 cents a serving. It’s also colorful when everything is “February gray.” Except for the dairy ingredient, everything can be stocked in your pantry.
Winter Fruit Salad
- 1 20 oz. can of pineapple chunks
- 1 15 oz. can of mandarin oranges
- 1 15 oz. can of apricot halves
- 1 cup shredded coconut
- 3/4 cup mini marshmallows
- 1 6 oz. cup of Greek yogurt in your choice of flavor (I used vanilla)
Drain the cans of fruit. Cut the apricot halves in half. Combine all other ingredients thoroughly. Chill for at least 2 hours or overnight. This is refreshing for brunch or slightly sweet for a dinner time side dish.
And why does it even matter if we take time to try a new recipe, think about serving fruit in winter, or consider preparing tasty food? It’s another way we serve those we love, create an environment of health and peace, take care of ourselves, and honor God by carrying out one small piece of His purposes for us.
“So, whether you eat or drink, or whatever you do, do all to the glory of God” (1 Cor. 10:31).
“Whatever you do, work heartily, as for the Lord and not for men, knowing that from the Lord you will receive the inheritance as your reward. You are serving the Lord Christ” (Colossians 3:23-24).
So make the most of your time in the kitchen this weekend. It’s not only delicious work … it’s divine!
