I love Chicken Divan. It reminds me of the church ladies I knew when growing up in Northern Virginia.
I love Chicken Pockets. They remind me of packing lunches with something I knew would make me a rock star mom.
I love Crescent Rolls. After I get over the pop of the can, they remind me of so many things, including Apple Dumplings and camping. There are so many things to do with them!
I love holding my supper š It reminds me of living in Asia!
So this creation brings it all together! So easy and awesome to save and send in a lunch box the next day … but you’ll have to flip for who gets the left over pocket!
Chicken Divan Crescent Pockets
- 2 rolls of Crescent Roll dough
- 1 pound of chicken breast
- 1 1/2 cups broccoli florets
- 1 can Cream of Chicken soup
- 1/2 cup mayonnaise
- 1 tsp. curry powder
- 1 cup shredded cheese
Boil the chicken breast until cooked thoroughly. Remove the chicken to cool and toss the broccoli in the same water to cook it until just tender, then drain. In the meantime, combine the soup, mayo, and curry powder. When the chicken cools, cut it into bite-sized pieces.
Unless you find the Crescent Roll dough sheets, you will see 2 triangles side by side. Press the perforation together to make a rectangle. One each rectangle, place 1/4 cup of chicken, several pieces of broccoli, about 1 Tablespoon of sauce, and then about 1 T. of cheese.Ā Fold the Crescent Roll dough all around the yummy filling, pressing the edges together to seal it as much as possible. It might not look perfect (speaking from the experienced kitchen, here …) but that’s okay. You’ll have leftover sauce, but you can heat it up (2 min in the microwave) to serve for dipping on the side.
Place pockets on a lightly sprayed (cooking spray, not hair spray) baking sheet. Bake at 375 degrees for about 15 minutes; cover with foil in the last few minutes if they’re browning too much. Let them sit on the pan for about 5-10 minutes before serving.
This makes 8 pockets.
These make a great entree for a brunch, shower, party, or supper. Enjoy!
