Sometimes I crave fresh apple pie, but I a little voice inside me says, “You don’t need apple pie.” You know, it’s a love/hate relationship with that little voice, so this side dish makes for a good compromise. The voice is happy, and so am I. 🙂 I made this as a fast side to go with some of the last grilled burgers of the summer and corn on the cob. I will admit that I did hear the voice ask, “Do you really need THAT much butter on your corn?” 🙂
Cinnamon apple walnut salad
- 2 large apples, chopped into cubes, but not peeled
- 1/4 c. chopped walnuts (or pecans … just keep it “fall-ish”)
- Sauce: 3 T. mayo, 2 T. lemon juice, 2 T. milk, 3 T. dark brown sugar, 3/4 t. cinnamon
Mix the sauce ingredients well until you don’t see many mayo lumps left; you will see a few, because of the action of the lemon juice on the dairy product. The dark brown sugar and cinnamon help to give it the apple pie flavor and make this a really sweet side to finish with. Toss in the nuts after combining the sauce, and just fold them in gently. After all, you don’t want to end up with apple sauce.

This weekend we’ll be using food to reach out to hundreds of college students as we partner with CRU on our University campus to provide a “brunch tailgate party” before the big football game. After all, food is a great way to say “LOVE!” I hope it doesn’t show that I really hate football, but love people. I got a t-shirt to help prove it 🙂 So tomorrow it’s biscuits and gravy day!
