I really do love to rhyme. Given that it’s the week before Christmas, I’ll share my motivation for my original, 5 ingredient, comforting Crockpot Chicken Confetti Soup Recipe with a little inspiration from ‘Twas the Night Before Christmas. Will you indulge me?
- ‘Twas one week til Christmas and I was behind
- Much time in the kitchen was so hard to find.
- With supper approaching and one hungry son
- I looked on the shelf to see what could be done.
- I reached for my crockpot and thought to myself,
- What would I cook if I was an elf?
- So off to the store with no time to waste,
- Rotisserie chicken inspired my taste.
- I flew down the aisle and to the end cap,
- An idea settled into my mind in a snap.
- When back to the house I arrived with a clatter,
- I dumped in 5 things with a slosh and a splatter.
- Away to my work I went with a dash
- Then returned after five, stirred the pot in a flash.
- The steam on the pot of the crock full of stew
- Gave the call to come eat to my family crew.
- “Now Jacob, now Jeff, now Jo from school?
- This soup is so good that you will all drool!”
- As I drew in my spoon and turned with a grin,
- My loved ones were fed and together again!
Crockpot Chicken Confetti Soup Recipe
- 16 oz. frozen hashbrown (cubed, not shredded) potatoes (This is 1/2 a bag)
- 15 oz. can Del Monte Fiesta Corn (undrained)
- 14 oz. can Tiny Tender Sliced Carrots (undrained)
- 10 oz. can Cream of Chicken Soup (Remember, this is mean to be QUICK … thus, the 3 cans)
- All breast meat of 1 Rotisserie Chicken, chopped to equal about 3 cups
Combine all 5 ingredients into a crockpot. Stir in 2 soup cans of water. Cook on high for about 3 hours.

Wow, this sounds delicious! I don’t understand the comment about 4 cans – does it call for 4 cans of soup?

So sorry that was confusing and that it took me so long to see your question! Blame it on Christmas 🙂 It should’ve said “3” and that’s referring to the can of corn, can of carrots, and can of soup. NOT 4 cans of soup. I hope you enjoy it! Super easy, colorful, and yummy!
