Not every good recipe makes a good picture. This one doesn’t. It’s not food-photogenic, because as Jeff and JoHanna agree, “This stuff is amazing, but it doesn’t look like it will be.” š Love their honesty.
It looks a little bit like ocean foam, but that’s where the comparison ends. In a way, it’s not beautiful, but it’s delicious and that’s what counts, right? I’ll admit that it probably won’t win a place in the pages of Eating Well magazine, even though it’s orange pineapple, but it reminds me of days when my mom made cold size salads in early Tupperware. It could be a new favorite dish on your weekend picnic table.
What I love about Big Orange Pineapple Fluff
- It’s served cold = refreshing on hot days.
- It’s light and complements the main dish.
- It can be made ahead = easy prep.
- It only uses 4 ingredients (cheap ones) = simple.
- It takes ingredients I can keep in the pantry.
Easy Steps for Big Orange Pineapple Fluff
- Put 1 can of evaporated milk in the fridge to chill (I used a low fat option.)
- Mix 2 small packages of orange jello with 2 cups of hot water & 1/3 cup of sugar; stir well.
- Let the jello set slightly in the fridge while the can of milk chills. (2-3 hours?)
- When the jello is slightly set, you need 2 medium sized bowls and a mixer. In separate bowls, whip the evaporated milk and the jello until they’re frothy (you need to see bubbles).
- Blend them together in the bowl you’d like to serve it in, and then mix in 1Ā 20 oz. can of crushed pineapple (drained). The mixture will still be frothy. Cover with plastic wrap, and leave it in the fridge all day or overnight to set firmly.
You can serve the Big Orange Pineapple Fluff right out of the big bowl, or you can serve it in small dishes as a side salad. I’ll warn you … you won’t want to put the spoon down to take a picture of the “fluff.”
I served this one night this week as a side dish. Here was our menu:
- Grilled teriyaki pork chops (Need to share this family favorite with you!)
- Roasted sweet potatoes with sea salt (No recipe really … so easy!)
- Bok choy & napa crunchy salad (I need to share this one with you!)
- Big Orange Pineapple Fluff
- Drumstick Pie
