Tasty Tuesday … in honor of England

Jeff and I spent our first honeymoon in England. We were leading a team of students from our alma mater, and it was such a great experience. I got to be the “girl” out front who talked to the puppets, and I’m very at home talking to felted puppets. 🙂

In honor of the Royal Wedding this week, I thought I would share a recipe with you that came home with me from England that year. It was given to me by our host, Ruth, in Swindon, England. I can still see her small house with a gated front garden and windows filled with white lace. I didn’t get a chance to make this recipe yesterday, so try to use your imagination. I’ll just promise you that it’s delicious, but simple to make.

Ruth’s Polish Cake

1 1/2 cups of graham cracker crumbs (8 oz)
1/2 cup margarine or butter
1 T. light karo corn syrup
1 T. Nestle’s chocolate drink mix (I wonder if you could substitute plain cocoa)
3 oz. semi-sweet chocolate chips

  • Heat the margarine, corn syrup, and drink mix until margarine is melted.
  • Mix in the graham cracker crumbs.
  • Press the mixture into an 8×8 tin. (I used a glass or metal pan)
  • Melt chocolate and pour over mixture.
  • Leave it to set, before you cut into squares.
  • Keeps well in the fridge. 

I’m feeling inspired just remembering these. Check back for a photo later. 😉

    Oh I DID make that confusing. We led the team for our first ANNIVERSARY.  We aren't that unselfish to share our honeymoon with a bunch of college students.  😉  LOVED them, but not on our honeymoon.
