Hands down, this wins for “comfort food” in my personal recipe book. First brought to me by my comforting friend Donna, I soon learned that it goes back even further to my encouraging friend LeAnn. This Creamy Chicken Noodle Soup has spoken “love” to many women in my real world, and I hope you’ll enjoy it. You don’t have to be sad, lonely, sick, or grieving to be blessed by this soup … but if you are, put this on your menu. Or … call your friend (do you have a Donna or a LeAnn?) and ask her to make it for you. You could even pin this recipe on Pinterest or share it on Facebook and suggest it to her. 🙂
This recipe is also quick to make, pretty economical, and easy to transport. It’s creamy enough to make you feel warm all over, but not liquidy enough to slop on your floor mats. Since I was short on time when I made it this week, I used a short cut that I’ll share at the end; it turned out to be a new/excellent alternative. There is rarely any left when I make a batch of this, but it makes perfect “next day leftovers” for lunch, in cases you can manage to hide a bowl. Serve it with a salad or bread, if you want, but we’re usually just happy with a few scoops of this goodness.
Creamy Chicken Noodle Soup
(Makes 2 1/2 quarts)
2 quarts of water
8 chicken bouillon cubes (or the equivalent of chicken stock)
3 c. cooked and chopped chicken
6 1/2 c. egg noodles (12 oz)
2 can cream of chicken soup
1 c. sour cream
Boil the water and bouillon. Add noodles and cook, uncovered, until they’re tender. Don’t drain them. Add soup and chicken, heat, and combine thoroughly. (I add in a little salt and pepper to taste here, too) Remove from heat. Stir in sour cream.
My quick alternative: Buy one rotisserie chicken and take the chicken off the bone. Chop chicken into bite sized pieces and use in place of cooking chicken.
Note: I’ve also cooked the chicken in the 1 quarts of water and used that in place of 8 bouillon cubes. If I want a stronger taste, I just add a couple of bouillon cubes.

I’ve been blessed several times by this soup as well 😉 It is VERY tasty… and I’ve even made it myself. I think I sauteed a little celery, carrot and onion and added it. It’s sooo good!
